Culinary Malta is strongly influenced by the Italian and Arabic cuisine. Despite the long colonial period, the typical British cuisine has left no deep mark on Malta. The best places to explore the flavours of the country are the many quaint restaurants in the side streets of the Old Towns.
The offer ranges from the famous fish soup with rice and lots of garlic (Aljotta) to peppers stuffed with minced meat, olives and capers (Bzar ahdar mimli) to stewed rabbit. A real insider‘s tip for rabbit dishes like the rabbit stew (Stuffat Tal-Fenek) is the "Ta'Karolina" in Xlendi. Also highly recommended is the "La Maltija" in Paceville, a restaurant whose owner has his own cooking show on the Maltese television. Not to be missed besides fresh octopus carpaccio in the "Barracuda", are other kinds of goodies such as the savoury pastry
filled with ricotta cheese, fish, meat or peas (Pastizzi).
Blue caves, crystal clear water and a brightly coloured underwater world
Fully replenished, it is time to explore the wild side of Malta. Number 1 on your bucket list should be a boat trip to the blue caves of Malta. To experience all the magic of the caves and arches, you should start the tour as early as possible in the morning. At this time there are very special lighting conditions that make the grottos shine in a fabulous blue and allow a view of the sea-dwellers swirling in the crystal-clear water. Booking an early tour should not be a problem if you get up in time. In many places in Malta, the church bells ringing at 5:30, make the alarm clock on your smart phone an unnecessary requirement.
Back on land, it continues to the remains of the "Blue Window", a once monumental rock arch, which in a storm in the spring of 2017 fell into the sea. Are you looking for a little adventure? How about a diving trip in front of the neighbouring island of Gozo, which has one of the most spectacular dive spots in Europe, the Cathedral Cave.
In this huge cave the name is the program, because in the unique light and the incredible sight, fish shoals and aquatic plants present themselves in a breathtakingly bright colorfulness, which is normally only common in the tropics.
